I recently had the pleasure of sampling a very flavourful Japanese dish called 'Katsu-Don' and the Miso soup that came with it was very satisfying. I have dug up a slight variation to the soup I had, this one with mushrooms and tofu can also be served as a main. You won't believe that it cooks in under 10 minutes.
