Nick's Lamb Kofta Curry
My hubby adapted this from "The Food Of India" cookbook and it was just fantastic. The lamb koftas were tender and melted in the mouth, the curry was tangy and very aromatic. A tad time-consuming but well worth the effort.

Thai Fishcakes
An excellent party idea, this finger food is spicy and very very tempting. The golden brown, crisp crust speckled with greens and reds adds to the visual appeal. Serve on a platter of chilled lettuce with a cooling dipping sauce.

Marinated Olives with Lemon & Fennel
This recipe from an old June 2003 issue of The Australian Table Magazine sounded really interesting. It turned out amazing, I might be partial to it, coz I am a compulsive olive popper. The recipe said to cover with extra-virgin oil, but since it was a lot, I drained it a bit before serving.

Lemon Polenta Crisps [Biscuits]
I adapted this recipe from the Australian Women's Weekly 'Cakes, Biscuits & Slices' last Christmas. I wanted a visual contrast to the dark and handsome gingerbread biscuits I was making. These turned out just delicious. The first time I made them, I used the polenta as is and I noticed a slight, sticky crunch [very interesting texture-wise]. So the next time around, I dry roasted the polenta in a skillet over low heat, tossing and agitating constantly, so that the polenta was a delicate shade warmer. This time the crunch was perfect! Make them chubby or thin crisps, these biscuits are made for popping in your mouth.
