| Coconut Walnut Slice | |
In Australian Women's Weekly "Cakes And Slices", this recipe is referred to as "Caramel Walnut Slice". I figured out that it was incorrectly titled after I started making it, as it had neither liquid glucose nor condensed milk which would have contributed to the "caramel" in the slice. The excessive use of coconut led me to believe that it was actually "Coconut Walnut Slice" and boy was it yummy!

"Bhel" is an Indian term most often used to describe a savoury snack with a base of puffed rice, beans or nuts mixed with chopped salad veggies and flavoured with spices and sauces to impart that distinct "chatpata" taste that has millions of fans all around the world. In this unusual "bhel" version, the base is corn kernels and chopped fruits have been added alongwith veggies to make it kid friendly. Try serving in little paper cups at your kid's next birthday party for a nutritious birthday treat.

I adapted this recipe from a Kid's Birthday Party Book with a few minor changes of my own. I gave it a lemon flavour and iced it with homemade Lemon Buttercream. It was light, tasted marvellous and looked absolutely gorgeous. A great party cake to whip up on short notice.

| Paneer Tikka Butter Masala | |
This was and still remains my brother's favourite restaurant food. The paneer is quite melt-in-the-mouth and the sauce is rich and bursting with flavour. After testing and experimenting with several recipes, I felt this one came the closest to the ones available commercially in Indian restaurants.

What a beauty this turned out to be? I had leftover Tofu And Prawn Curry. I was making Roasted Peanuts Thai Fried Rice and wanted a fresh Thai Salad to go with it. A medley of flavours gave this salad a lovely zing and the spice was just right.

You won't believe how gorgeous this looks in the pan ... crumbly and textured yellow goodness with a light sprinkling of red and green. Now if it looks so yummy, imagine how it must taste fresh out of the oven! Experiment with different types of chillies, I say the hotter, the better!
