    Gajar Ka Halwa [Indian Carrot Pudding]
    "Gajar Ka Halwa" brings to mind little ornate steel bowls full of delicious, moist, beautifully textured carrot pudding garnished with slivered nuts and silver foil [varakh]. The typical Halwa like the one Mum makes, takes anywhere between 2-6 hours simmering away on the stove. Thanks to modern technology [microwave] and a lot of laziness [me], I have conjured up my own version of the "Microwave Gajar Ka Halwa". It takes 20 minutes to cook and if you practice it enough number of times, it tastes as good as the lengthy procedure version, I swear!!

    "Bhel" is an Indian term most often used to describe a savoury snack with a base of puffed rice, beans or nuts mixed with chopped salad veggies and flavoured with spices and sauces to impart that distinct "chatpata" taste that has millions of fans all around the world. In this unusual "bhel" version, the base is corn kernels and chopped fruits have been added alongwith veggies to make it kid friendly. Try serving in little paper cups at your kid's next birthday party for a nutritious birthday treat.

    This is a great source of iron and antioxidants for toddlers and adults alike. It is simple to make, extremely nutritious and full of hearty, buttery flavour. I use frozen spinach portions for a quicker option, but fresh spinach will work equally well.
