Poffertjes [Dutch Pancakes]
I had my first taste of the scrumptiously delicious 'Poffertjes' at the St. Ives Heritage Fair in Sydney. There were heaps of fruits and toppings to choose from, we chose fresh strawberries with whipped cream and chocolate sauce and were instantly hooked. The snaking line at the stall was too long and we were running late, or else we would've surely returned for a second helping. We figured that something so good needed to be made everyday, so I got this beautiful, genuine cast-iron Poffertje pan off ebay and proceeded to wow my family with platefuls of puffed, golden goodness topped with chopped bananas and caramel sauce with nuts, fresh ice-cream, maple syrup, strawberries .... ahhh stop me someone, I am in love!

Eggnog Semifreddo
Jingle Bells, Jingle Bells, Jingle All The Way ............ nothing says Christmas than this brilliant concoction that is part eggnog, part ice-cream and completely, sinfully yummy. It is so Aussie to convert an age old warming drink into a cold treat, perfect for a hot blistery Christmas here in Australia. I adapted this from Donna Hay's classic recipe and couldn't be happier!

Madeira Sponge Cake With Lemon Buttercream
I adapted this recipe from a Kid's Birthday Party Book with a few minor changes of my own. I gave it a lemon flavour and iced it with homemade Lemon Buttercream. It was light, tasted marvellous and looked absolutely gorgeous. A great party cake to whip up on short notice.

Basic Yellow Cake
This makes a great buttery base for kid's birthday cakes. Dress it up with some delicious homemade buttercream, pop on some cake ornaments and you have a show stealer at the party! This recipe makes one big or 2 medium sized cakes and can feed 15-20 people.

Chinese Omelette
This is a quick, fun recipe for two. I prefer to make one large omelette instead of two individual ones and just cut it up in half. The only preparation required is pulling the ingredients out of your refrigerator and you have a Chinese delicacy in under 10 minutes.
