    Spicy Prawns
These prawns are great as a side dish with a main course of rice or noodles, but they also serve well spread out over salad leaves on a platter with little toothpicks skewered through them for a fantastic finger food idea.

A great addition to your pantry, this chutney packs a fiery punch.

    Ginger Chutney
This chutney is ready in a few minutes but needs to macerate for at least 2 days before you can use it. So make it a couple of days ahead in time.

    Chilli Butter
This is a wonderful, flavoured butter to have handy in your fridge. I use this to whip up a spicy omelette, to grill my corn cobs on in the weekends and to slather my sandwiches instead of mayonnaise.

    Home-made Sweet Chilli Sauce
Sweet Chilli Sauce revolutionised the use of dips and gave good old plain tomato ketchup a run for its money. Versatile and oh so yummy, sweet chilli sauce can be even more satisfying if it is homemade.

    Cardamom And Ginger Slice
This is a very aromatic and full bodied slice, a great way to end an Indian or Moroccan Feast. Serve it with spiced "chai".

    Chaat Masala
Chaat Masala is the essence of Indian Street Food and bears the trademark sour and tangy taste of the famed 'bhel-puri' and 'golgappa'. Although there are many readymade varieties available from companies like "Everest", "Mangal", "MDH" etc.. it is very gratifying to make your own, varying the amounts of ingredients to achieve your own unique taste. Make in small quantities and use generously in 'chaat dishes' and sparingly on raw fruit salads and cooked tandoori meat.

    Curry-Lime Dip
A sensational, quite hot dip which goes beautifully with chicken drumsticks or oriental crackers.

    Falafel
Falafel is essentially ground spiced chickpeas shaped into balls and fried. Its scrumptious just eaten on its own and even yummier when stuffed inside pita breads. I recently sampled a gourmet pizza called 'Mediterranean' and one of the toppings was "Falafel" and it was a true masterpiece!
