    Kachumbar [Fresh Vegetable Relish]
    This is a Gujrati favorite and accompanies the famous 'Gujarati Thali'. This relish is made up of "fresh" [any fresh vegetables you can lay your hands on like tomato, capsicum, beetroot .. the more the merrier] and "crunchy" [mainly onions, cucumbers and carrots] elements. Great for hot summer afternoons with any kind of meal and healthy to boot. Best consumed when fresh, else tends to get soggy after a day.
