It is so Aussie to convert an age old warming drink into a cold treat, perfect for a hot blistery Christmas here in Australia. I adapted this from Donna Hay's classic recipe and couldn't be happier!

    Make this a day ahead of your big, casual entertaining night and store in the fridge. Whip it out an hour before the guests arrive and leave it at the table. Bring some bruschetta, warm from the oven and see the delicious topping disappear as everyone scrambles to smear it on the bread!

    Madeira Sponge Cake With Lemon Buttercream
    I adapted this recipe from a Kid's Birthday Party Book with a few minor changes of my own. I gave it a lemon flavour and iced it with homemade Lemon Buttercream. It was light, tasted marvellous and looked absolutely gorgeous. A great party cake to whip up on short notice.

    Paneer Tikka Butter Masala
    This was and still remains my brother's favourite restaurant food. The paneer is quite melt-in-the-mouth and the sauce is rich and bursting with flavour. After testing and experimenting with several recipes, I felt this one came the closest to the ones available commercially in Indian restaurants.

    Masoor Ka Shorba [Lentil Soup With Yoghurt]
    A shorba is an Indian soup, often spiked with either cream or yoghurt. This Masoor Shorba is extremely rich in iron and protein and would make a great entree' for an Indian meal.
