To prevent ice cream from getting a freezer burn and going crunchy on the top, place a piece of plastic wrap on top of the ice cream, pressing down lightly until the surface is completely covered. Replace lid and put in the freezer.

    Tuver Ni Daal [Red Lentil Daal]
    One of Gujarat's most popular daals[dhaal,dal,dhal] and a base for the delightful 'daal dhokdi', this is my husband's favourite. I always make it in large quantities because it freezes well. Mango Pickle and Papad [papadums] go deliciously well with this simple homedmade 'daal-chaawal' meal.

    Malai Peda [Kalakand]
    Pedas are small, round flattened milk based sweets usually eaten and distributed to mark a happy or auspicious ocassion in India. They come in all sizes and flavours but are always round in shape. Malai Peda is the most scrumptious of the lot. It is essentially the famous 'Kalakand' [Kalakaand] but just round in shape [Kalakand is a square fudge filled with dairy goodness]. In India these sweets are traditionally made from 'khoya' and are called 'mithai'.

    Egg Bhurji
    I have no idea why it is called 'Bhurji', but that is the alias of 'scrambled eggs' in India; to be precise it is "Andaa Bhurji". This is even quicker than putting together an elaborate sandwich and so yum.

    Onion & Garlic Curry
    We had vegetable 'Pulao' for lunch one afternoon and nothing else to go with it. So we dished out this extremely easy water based curry as an accompaniment for the Pulao. It turned out quite flavourful and spicy, transforming a plate of rather plain rice into something special.

    Patra [Savoury, Steamed Leaf Rolls]
    Patra is a Gujarati specialty; full of flavour, smokey and spicy. The chief ingredient for the recipe and the way the dish is prepared is extremely interesting to watch. When I was small, I used to believe that the colocassia leaves were actually lotus pads, they were so huge.
