Poha Bake [Flattened Rice Flake Bake]
'Poha' or 'Pauva' is used to make a delightful array of snacks along India's West Coast, the most popular being 'Batata Pohe' aka 'Bataka Pauva', a savoury pilaf-style dish consisting of potatoes and flattened rice flakes. In 'Poha Bake', we give the traditional classic a modern twist and end up with a yummy finger food.

    Green Papaya And Mango Salad
What a beauty this turned out to be? I had leftover Tofu And Prawn Curry. I was making Roasted Peanuts Thai Fried Rice and wanted a fresh Thai Salad to go with it. A medley of flavours gave this salad a lovely zing and the spice was just right.

    Moong Barfi [Green Gram Sweet]
This is a gorgeous, rich looking, golden coloured "mithai" perfect for Diwali/Deepavali, the Indian Festival Of Lights. It smells absolutely fantastic and fragrant too. It is time consuming but well worth the effort.

    Ambakalia [Indian Mango Relish]
This is a tangy little relish made from the 'Ambakalia' variety of mangoes hailing from the Indian subcontinent. Use it as a marinade, layer it on your sandwiches or just grab a hefty spoonful if your curry is too fiery.

    Quick Mango Souffle
One of my friends whips this fast dessert up within minutes. I on the other hand managed to make a complete mess of it the first time around. A word to the wise .. be very careful with the gelatine, the rest is easy peasy!

    The Best-Ever Carrot Cake
After years of searching and experimenting, this cake happened!! I swear by this carrot cake recipe, it is the most scrumptious, delectably moist cake I have ever eaten. Tastes even better with a dollop of cream cheese frosting on top.

    Basic Yellow Cake
This makes a great buttery base for kid's birthday cakes. Dress it up with some delicious homemade buttercream, pop on some cake ornaments and you have a show stealer at the party! This recipe makes one big or 2 medium sized cakes and can feed 15-20 people.

    Pecan Caramel Fudge
This is an ooey-gooey, buttery fudge with a nice crunch. Alter the nuts and make new variations everytime. No baking required!

    Cool Cucumber Sandwiches
No cooking required for these simple and stylish sandwiches. White bread enhances the clean, crisp look and crunchy, fresh taste. But go ahead in a healthier wholemeal bread version by all means.

    Blueberry Rocky Road Squares
This is a great quick sweet treat for the kiddies that requires no baking. You can vary the ingredients [nuts and dried fruits] everytime to get a brand new treat.
