    Spiced Preserved Lemons
This recipe just oozes summer warmth and memories of lazy days spent in the afternoon sun. Make in summer and reap the benefit throughout autumn and winter. Although the pickling process is long, the actual making part is easy-peasy.

    Mango Halwa
Halwa is a traditional Indian Slow-Cooked Pudding. One of the main differences between a 'Halwa' and a typical Western 'Pudding' is the manner in which it is cooked. 'Halwa' is invariably cooked over a stovetop, stirring constantly till it thickens where as a 'Pudding' is baked to the desired consistency. This 'Halwa' is a beautiful variation to the much-loved Mango Mousse, ethnic style. This recipe calls for a lot of sugar so enjoy at your own discretion.

    Lapsi
Lapsi or 'Fada Lapsi' as it is called in Western India, is known as 'Dalia'[Daliya] to me ever since I was a kid. It is essentially a porridge made of bulgar wheat and jaggery to mark auspicious ocassions in the Gujarati Community. Try giving this to your kids with cold milk instead of cereal for breakfast for a change.

    Rajma Bake
'Rajma' is the Indian term for Red Kidney Beans. The Rajma Curry' is a very popular North Indian dish and a favourite at our house as well. The soaking and softening of the beans takes a considerable amount of time. You can use store bought cans of red kidney beans for a quicker alternative. Here is a western take on the traditional 'Rajma Chawal'.

    Rosewater Rice Pudding
A hint of exotica due to the flavour and aroma infused by rosewater, this is a very interesting choice for dessert. It can be enjoyed warm or chilled. It is very child-friendly too.
