I love microwave recipes!! This one was an experiment that was a huge success, took me just 8 minutes to make and was glorious, gratifying and delicious ... a perfect mithai/barfi for that special occasion. I made it last night for Raksha Bandhan and there is hardly any left.

King Prawn and Mango Salsa Salad
This salad screams "tropical" like nothing you have ever tasted. The zing of the chilli, the tang of lime and the mango pieces bursting with flavour make this "no-cook" dish a winner!

Kesar Pista Amrakhand [Saffron, Pistachio & Mango Yoghurt Shrikhand]
If there is one thing from the coffers of Indian cuisine that is not commonplace here in Sydney and perhaps in the rest of Australia, it is the delectable and creamy "Shrikhand". Shrikhand is a delicious dessert made by hanging yoghurt in a muslin cloth and draining it of its liquid content. Whipped together with chopped fresh fruits, nuts and flavouring; the Shrikhand is the highlight of festivals in western Indian and as a member of the authentic Indian Thali all along India's west coast. A softer version of the shrikhand is the "Mattha" which is equally delicious and can be easily made by allowing some liquid to remain in the original recipe. Here is a recipe for homemade Amrakhand, which essentially is Mango Shrikhand.

Green Papaya And Mango Salad
What a beauty this turned out to be? I had leftover Tofu And Prawn Curry. I was making Roasted Peanuts Thai Fried Rice and wanted a fresh Thai Salad to go with it. A medley of flavours gave this salad a lovely zing and the spice was just right.

Ambakalia [Indian Mango Relish]
This is a tangy little relish made from the 'Ambakalia' variety of mangoes hailing from the Indian subcontinent. Use it as a marinade, layer it on your sandwiches or just grab a hefty spoonful if your curry is too fiery.

Quick Mango Souffle
One of my friends whips this fast dessert up within minutes. I on the other hand managed to make a complete mess of it the first time around. A word to the wise .. be very careful with the gelatine, the rest is easy peasy!

Mango Halwa
Halwa is a traditional Indian Slow-Cooked Pudding. One of the main differences between a 'Halwa' and a typical Western 'Pudding' is the manner in which it is cooked. 'Halwa' is invariably cooked over a stovetop, stirring constantly till it thickens where as a 'Pudding' is baked to the desired consistency. This 'Halwa' is a beautiful variation to the much-loved Mango Mousse, ethnic style. This recipe calls for a lot of sugar so enjoy at your own discretion.
