Tadka Dal
I adapted this from Tarla Dalal's "Dals" cookbook. The recipe is simple and is easily made from staples in your fridge and pantry. I tweaked it a bit by adding daal masala and increasing the cooking time on low heat. The original recipe suggests pressure cooking, a process that I skipped.

Chola Gobi [Quick Chickpea And Cauliflower Curry]
"Chola Gobi" is an interesting twist to the more traditional and world famous "Aloo Gobi". This is an extremely fast recipe that I devised when I was pressed for time and now use it wisely on a short notice. I just make sure that I have all the ingredients handy at all times, and I can have this ready in under 20 minutes when I need a miracle.

Gel's Lamb Curry
This lamb curry is no-fuss and fast. It is my favourite back-up for when I am running low on time and have mice scurrying around in my tummy. It is succulent, delicious and filling. Don't let the number of ingredients faze you because the only preparation required is assembling the ingredients and then throwing them all together in the pan!

Saag Gosht [Indian Lamb & Spinach Curry]
This is a very quick and delicious version of the age old classic "Saag Gosht" which means "Spinach Lamb" literally. It is flavourful, fast and drier than normal curries. I prefer it with Naan Bread instead of rice or 'pulao'.

Gujarati Kadhi [Sweet Yoghurt Curry]
This is a truly authentic Kadhi [Yoghurt Curry] recipe handed down to me by my mom. Anyone who has tasted her Kadhi will tell you that there is something extra special about its rich, creamy consistency and delightful sweet and sour taste. I make this quite often and although I am very pleased with the result, it doesn't compare to the beautiful 'Kadhi' my mom makes.

Fruit Chicken Curry
One fine day my significant other said to me, "I feel that we have not been having enough fruits lately." That is when I got the idea for this recipe. I picked up some apples and pears from the fruit bowl and decided to make them into a delicious main course. I also combined some dry fruits for an exotic fruity flavour.
