Cauliflower & Carrot Pickle

A great relish to have with roasts or sandwiches and keeps for upto 3 months in the refrigerator.
 
Prep & Cooking Time: 3 days
Serves 4
  Vegetarian
Ingredients
   2 tbsp salt
   2 tbsp turmeric powder
   2 tbsp chilli powder
   1 tbsp ground mustard
   cauliflower florets
   diced carrots
   boiled spring onions
   sliced lotus stems
   2 green chillies chopped
   1 tsp chopped ginger
   1 tsp chopped garlic
Method :


Mix all the ingredients in a bowl and pour into a glass bottle. Shake and stir after capping the bottle. Let all the flavours soak in for about 3 days in the bottle before eating. If you want to serve it immediately add some acetic acid. Store in the refrigerator.

  • Make sure to sterilize the jar before filling with the pickle.
  • You can use this pickle for stir-frying in Chinese recipes.
