Medu Wada

Nicknamed the "Indian Donut", Medu Wada is a delicious South Indian tiffin item and very easy to make.
 
Preparation Time: 8 hrs
Standing Time: 5 hrs
Cooking Time: 40 mins
Makes 10 pieces
  From My Recipe Book  Vegetarian
Ingredients
   oil to fry
   1 tbsp fenugreek [methi] seeds
   3 green chillies finely chopped
   12-14 curry leaves
   salt to taste
   2 cups urad dal
   water to mix
Method

  1. Wash and soak the urad dal alongwith the fenugreek [ methi ] seeds overnight [7-10 hours]. Grind the dal coarsely in a grinder/mixer to form a semi-smooth paste. Allow the mixture to stand for at least 4-5 hours till it gets fermented.
  2. Mix green chillies, curry leaves and salt with the paste. Drop medium sized balls of the paste in hot oil and deep fry till golden and crisp.


Serving suggestions
  • Serve hot with sambhar and coconut chutney.
  • Dip prepared wadas in water, squeeze the moisture out and serve with cold yoghurt and toppings.

  • A Medu Wada Maker is very handy while dropping perfect donut shaped wadas in hot oil. Available in most Indian Stores.
