| This recipe is a delightful take on the Chinese Style Pineapple concoction, with a lemony twist. The fruits give a tangy, zesty flavour and the dish couples well with some bland but healthy versions of brown rice. |

| Ingredients |
| For Lemon Curd |
|
2 oz castor sugar
|
|
4 egg yolks
|
|
1 tbsp lemon juice | | For Pineapple Rings |
|
1 tsp oil
|
|
4 oz self-raising flour
|
|
1/2 pint milk
|
|
1 egg, beaten
|
|
a pinch of salt
|
|
1 can sliced pineapple rings |

|
| Method | | For the batter, mix the flour, milk, salt and oil. Add the beaten egg and mix into smooth mixture. Drain the pineapples on a tissue, dip them into the batter and shallow fry both sides until brown. For the sauce, beat the sugar and eggs together. Add the lemon juice and gently heat. Stir until it thickens and add dollops of the mix onto the pineapple rings. In case it thickens too much, add some milk. |
