| A perfect dessert for a warm summer day, Berry Mousse is extremely easy and quick to make. Make it a day ahead of the weekend and serve it up after a light salad lunch with friends. |

| Ingredients |

250 gm strawberries
|
|
600 gm strawberry puree
|
|
500 gm white cheese
|
|
juice of 2 lemons
|
|
1/2 tsp gelatine
|
|
100 gm powdered white sugar
|
|
2 eggs |

| Method | | In a small saucepan, melt the gelatine in the lemon juice on low heat. Beat the egg whites till frothy. In an earthen pot, whip together the white cheese with the sugar, egg yolks and the warm gelatine. Add 500 gm of the berry puree and delicately incorporate the whipped egg whites. Pour the mousse preparation into a mould and place it in the refrigerator for 4 hours. Remove the mousse from the mould by placing the bottom of the mould in a pan of warm water for several minutes. Remove the mousse on a platter. Decorate with berries and serve. |
