| Green Tomato Chutney is a delicious, healthy accompaniment for all kinds of roasts. It also goes well with ethnic breads like Naans, Tortillas or Lebanese Bread. Make a substantial amount and store it in your pantry. It might save you some some time on a rainy day. |

| Ingredients |

3 tbsp pickling spice
|
|
2 large garlic cloves crushed
|
|
450 gms onions chopped [use red onions for pinkish tinge]
|
|
450 gms cooking apples, peeled, cored and chopped
|
|
1 tbsp salt
|
|
1.75 kg green tomatoes, roughly chopped
|
|
600 ml cider vinegar
|
|
450 gms granulated sugar |
|

| Method | Place the tomatoes, onions, apples and garlic in a large saucepan. Add the salt. Tie the pickling spice in a piece of muslin and add to the pan. Pour in half the vinegar and bring to boil. Lower the heat and simmer for 1 hour or until the chutney is thick, stirring frequently. Dissolve the sugar in the remaining vinegar and add to the chutney. Simmer for 1 1/2 hours until the chutney is thick, stirring. Remove the muslin bag from the chutney. Spoon the hot chutney into warm sterilized jars. Cover with airtight, vinegar-proof lids and store for at least 1 month before using. |
