| Ingredients |
|
5 large carrots, chopped into small cubes
|

a handful of coriander leaves finely chopped
|
|
juice of 2 lemons
|
|
2 tsp sugar
|
|
a pinch of salt
|
|
a pinch of rock salt
|
|
a handful of mint leaves roughly chopped |

| Method |
Combine all ingredients in a bowl. Mix and toss well. Chill until ready to serve. |
