Spicy Drunken Bananas
Added: 2nd Aug, 2005 | Viewed 368 times | |
Put away the liquor. This ingenious dessert will warm your cockles in a way that a glassful of rum can't. Strictly for the grown-ups, especially if you go a wee bit easy on the measurement of the 'Rum'.

Preparation Time: 10 mins
Cooking Time: 15 mins
Serves 4
  From My Recipe Book  Vegetarian
Ingredients
   8 firm ripe bananas
   2 tbsp butter
   1/2 cup dark brown sugar
   1 tsp ground allspice
   1/2 tsp ground ginger
   seeds from 5 cardamoms crushed
juice of 1 lime or orange
   2 tbsp rum
   whipped cream to serve
   a sprinkling of ground nutmeg
Method

Preheat oven to 200C/400F/gas 6. Grease a shallow baking dish with the butter and place the bananas in a single layer after peeling and cutting them in half lengthways. Pour over the lime or roange juice. Mix the sugar, allspice, ginger, cardamoms and nutmeg in a bowl and sprinkle over the bananas. Dot with the remaining butter. Bake for approximately 15 minutes, basting once until the bananas are soft.

Remove from oven. Warm the rum in a metal soup ladle, pour it over the bananas and set it alight. As soon as the flames die down, serve hot with whipped cream.
