Place the apples, dried fruit and orange rind in a large saucepan. Stir in the mixed spice, vinegar and sugar. Heat gently, stirring until all the sugar is dissolved. Bring to a boil, then lower heat and simmer for approximately 40-50 minutes stirring occasionally till the mixture is thick. Ladle into warm sterilized jars and stand for at least a month before using.
