| Sweet Corn Chicken Soup |

| This soup is one of my favorites and turns out exactly like the one in the little Chinese place we used to have after college. It is very easy and quick to make. |

| Ingredients |
|
500 gms cooked and shredded chicken breasts/thigh
|
|
500gms creamed corn
|
|
1 litre chicken stock
|
|
1 tbsp sugar
|
|
1 egg, beaten
|
|
4 tsp cornflour
|
|
black pepper
|
|
chopped spring onions
|
|
a bunch of coriander |

| Method | | Cook chicken, corn, sugar and stock till it starts boiling. Slowly drizzle the beaten egg in the soup and stir constantly. Mix the cornflour with some water and add to the soup. Continue cooking till it starts to thicken. Garnish and serve with green chilli sauce. |
