| This is a traditional Indian sweet very popular in the western region. This is the basic recipe for the fudge which can be adapted for many delicious variations and flavours. |

| Ingredients |
|
3 cups fresh dessicated coconut
|
|
1 cup milk
|
|
1.5 cups sugar
|
|
1 cup cream |
|
|
| Method | | Place the coconut in a deep bottomed pan. Pour milk, cream and sugar over it. Mix well and cook on a slow flame for about 30-40 mins till the mixture leaves the sides of the pan. Cool to room temperature. Spread the mixture on a greased tray and chill in the refridgerator for 5 hours. Cut the fudge into squares and serve. |

| For a low fat option, use 1 more cup of milk instead of the cream. | | For 'Chocolate Coconut Barfi', add 2 tbsp of cocoa and a heaped tsp of 'milk masala' while cooking the mixture and garnish with silver foil before chilling. | |
