Bread Pudding with Banana Sauce

A hearty dessert to warm your insides on a cold winter night, this pud is gorgeous and full of a robust buttery banana flavour. Seconds Anyone?
 
Preparation Time: 10 mins
Standing Time: 30 mins
Cooking Time: 35 mins
Serves 6
  Vegetarian  Egg
Ingredients
For The Pudding
   6 large eggs
   1/2 cup sugar
   1/2 tsp salt
   2 cups warm milk
   1 tbps vanilla essence
   2 tsp cinnamon powder
   12 bread slices
For The Sauce
   2 firm ripe bananas
   1/2 cup unsalted butter cut into pieces
   1/4 cup packed light brown sugar
   1/4 cup light rum
To prepare The Pudding
Whisk together eggs, sugar and salt in a large bowl, then whisk in milk, vanilla and cinnamon. Places the slices of bread in a large buttered cake pan. Then pour custard. let stand, gently pressing down on bread occasionally until soft and some of the custard is absorbed for about 30 minutes. Preheat oven to 350 deg F. Bake bread pudding in the center of the oven until golden on top and a skewer inserted in the center comes out clean for roughly 35 minutes. Transfer to a rack to cool slightly for about 5 minutes. Remove from pan and cool on rack for another 10 minutes. At this point the pudding will have shrunk slightly.
To Prepare The Sauce
While the pudding is cooling down, cut bananas crosswise into 1/3 inch thick slices. Melt butter in a 1-quart heavy saucepan over moderate heat, then add brown sugar and cook, whisking until smooth and combined well for about a minute. Add rum and bananas, then simmer stirring occasionally for 2 minutes.
Serving suggestions
  • Serve pudding warm with sauce spooned over it.
