Mint Potatoes

Mint Potatoes or 'Pudina Aloo' as they would be called in India are a great idea for finger food or party snack. You can dish them out in a variety of creative ways and a vast range of dips and sauces would accompany these minty potatoes well.
 
Preparation Time: 10 mins
Cooking Time: 5 mins
Serves 3
   Vegetarian  From My Recipe Book
Ingredients
   1/2 kg potatoes boiled, peeled and chopped
   1 cup mint leaves chopped
   3/4 tsp black pepper
   1 tsp amchur powder [mango powder]
   1/2 tsp chilli powder
   2 tsp salt
Method


Heat oil in a pan. Combine the pototoes with all the other ingredients in a bowl and mix well. Then pan-fry them for 4-5 minutes. Serve with mint chutney or mint yoghurt.
