| Green Coriander Chutney |

| This chutney is a regular in my refrigerator. It is very easy and quick to make and is a life saver when I am pressed for time. It is a healthy alternative to mayo in sandwiches, a great dip for finger food and a flavourful addition to curries. |

| Ingredients |

2 cups fresh coriander leaves and stalks
|
|
5 green chillies
|
|
50 g shelled peanuts
|
|
50 g roasted gram
|
|
1 tsp ginger paste
|
|
2 tsp sugar
|
|
salt to taste
|
|
juice of 1 lemon |
|
|
| Method | Grind the peanuts and roasted gram to a smooth paste with as little water as possible. Add fresh coriander. Grind the coriander finely. Then add the green chillies and grind some more. Add the ginger paste and sugar and mix well. Before serving add the salt and lemon juice. |
