| 'Seera' or 'Rawa Seera' also know as 'Halwa' in some parts of India, is the food everyone associates with God. This is for the simple reason that Seera is prepared during 'pujas' and festivals and is an offering to the Gods. It is the 'Prasad' you get after praying in temples. There are many different versions and it can be made and enjoyed in a non-religious context too. |

| Ingredients |
|
1 cup fine semolina [rawa]
|
|
3 cups milk
|
|
1 1/2 cup sugar
|
|
handful of cashewnuts
|
|
handful of raisins
|
|
2 tbsp ghee
|
|
few strands of saffron [optional] |

|
| Method |
| Combine milk in a saucepan alongwith the sugar and saffron strands. Bring to a boil. Remove from heat. Heat ghee in a wide pan and roast the semolina in it till it attains a golden hue. Add the cashewnuts and raisins. Reduce heat. Pour the warm milk over the roasted semolina slowly, stirring constantly till the 'seera' is cooked through and comes away from the sides of the pan. |

| Gel's Notes |
| Be careful while pouring the milk over the semolina as the mixture will 'bubble' and 'splutter'. |
| Using fine semolina makes 'melt-in-the-mouth' seera as opposed to the coarse type. |
| Water may be used instead of milk for a lighter version. |
| Almonds, Cardamoms and Nutmeg may be added to get a more exotic and robust flavour. |
