Chocoffee Irish Cream Cheesecake

This is a 'strictly-for-the-adults' dessert to warm you on a chilly evening. It is rich, sinful and pure indulgence. Make it a day ahead and enjoy the fruit of your labour.
 
Preparation Time: 10 mins
Cooking Time: 50 mins
Chilling Time: 360 mins
Serves 8
  Vegetarian  Egg  From My Recipe Book
Ingredients
For The Base
   2 cups chocolate shortbread
   2 tsp brown sugar
   1/2 cup softened butter
For The Filling
   400gm cream cheese
   1/2 cup castor sugar
   1/2 cup bailey's irish cream
   2 tsp instant coffee
   1 tbsp hot water
   2 tbsp chocolate syrup
   3 large eggs
For The Topping
   whipped cream
   chocolate flakes
   coffee beans
Method



Mix all the ingredients for the base in a food processor till you get a crumbed mixture. Press into the bottom of a greased 9 inch springform pan. Chill in the refrigerator.

Mix the cream cheese, caster sugar, eggs and irish cream in a bowl. Beat well till it forms a smooth, light mixture. Blend instant coffee with the hot water and pour in the mixture. Mix well.

Pour the mixture onto the chilled base crust. Pour in the chocolate syrup and stir once with a fork to get chocolate swirls. Bake at 150 deg C for 50 mins till the center is just set. Cool completely. Chill for 6-8 hours.

Decorate with whipped creams, chocolate flakes and coffee beans.

Serving suggestions
  • Serve with a delicious cup of frothy vanilla coffee.
