| Gel's Hot Milk Sponge Cake |

| A wonderfully light and low on calories sponge cake that can be sampled as soon as it is baked or teamed up with fresh fruits, ice-cream, sauces or icing for a quick dessert. |

| Ingredients |
|
2 cups all purpose flour
|
|
2 cups granulated white sugar
|
|
1 cup milk
|
|
4 eggs
|
|
2 tsp vanilla essence
|
|
2 tsp baking powder |
|

| Method |
Sift the flour and baking powder in a bowl. In another bowl whisk the sugar and eggs with a blender till the mixture is double in volume and lemon in color. Beat in the vanilla essence. Heat the milk in a saucepan till it reaches boiling point. Allow it to cool a bit and beat it into the lemon colored mixture. Finally blend the flour with the mixture till it becomes smooth in consistency. Pour in a 10 in cake pan and bake in a preheated oven for 45mins at 180 C. |
