| This is a quick staple for almost any Mexican fare. It goes extremely well with meatballs, tacos or enchiladas. Make this instead of salad for a pleasant change one weekday. |

| Ingredients |

2 tomatoes, seeds removed, diced
|

1 avocado, diced
|
|
1 can corn kernels, drained
|
|
1/2 cup coriander leaves, chopped fine
|
|
1 lemon, juiced |

| Method | | Combine tomato, avocado, corn kernels, coriander and lemon juice in a bowl. Season with salt and pepper. Toss well. Cover and refrigerate until ready to serve. |
