| Soup doesn't have to be a winter warmer. It can very well serve as a summer cooler, especially this all time favourite chilled soup. It is extremely easy and quick to make |

| Ingredients |
|
500g cucumbers, peeled and grated
|
|
1 garlic clove
|
|
1 tsp cumin powder
|
|
2 cups natural yoghurt
|
|
1/2 cup chicken stock
|
|
1/4 cup chopped pistachios [optional] |

| Method | | Place cucumber, garlic, cumin powder and natural yoghurt in a food processor. Blend until smooth. Stir in chicken stock, addding more if the soup is too thick. Season to taste and chill. Serve topped with pistachios. |
