| Onion & Garlic Curry |

| We had vegetable 'Pulao' for lunch one afternoon and nothing else to go with it. So we dished out this extremely easy water based curry as an accompaniment for the Pulao. It turned out quite flavourful and spicy, transforming a plate of rather plain rice into something special. |

| Ingredients |
|
1 large onion, coarsely chopped
|
|
1 large green chilli, sliced
|
|
1 tbsp garlic paste
|
|
2 tbsp tomato sauce
|
|
2 tsp olive oil
|
|
3 bay leaves
|
|
2 cups water
|
|
2 tsp garam masala
|
|
1/2 tsp turmeric powder
|
|
salt to taste |

| Method | | Heat oil in a pan. Fry bay leaves, onions, chilli and garlic on low heat till caramelised. Add water and the remaining ingredients. Cover and simmer for 12 mins. Garnish with coriander leaves and serve with plain rice or Pulao. |

| I added a teaspoon of sugar [we love a bit of sweetness in our curries, it dulls the fiery taste of the chilli a bit], you may do the same. Other interesting additions would be yoghurt or light cream. | |
