| Ingredients |

1 1/2 cups fresh breadcrumbs [made from a day old white bread]
|
|
1 large brown onion, peeled
|
|
600 ml milk
|
|
1/2 cup thickened cream
|
|
4 whole cloves
|
|
2 dried bay leaves
|
|
3 sprigs fresh thyme
|
|
5 crushed black peppercorns
|
|
salt to taste
|
|
freshly ground black pepper |

| Method | | Press the cloves into the peeled onion. Place onion, bay leaves, thyme, peppercorns and milk in a small saucepan over medium heat for about 5 minutes. Set aside, covered for 20 minutes to infuse the flavours and aroma. Strain this milk mixture through a fine sieve into a clean saucepan. Discard onion, peppercorns, cloves, bay leaves and thyme. Add breadcrumbs to milk and stir well. Cook over medium heat, stirring constantly until sauce thickens. Remove from heat and stir in the cream. Season with salt and pepper. Serve immediately. |
