| I have no idea why it is called 'Bhurji', but that is the alias of 'scrambled eggs' in India; to be precise it is "Andaa Bhurji". This is even quicker than putting together an elaborate sandwich and so yum. |

| Ingredients |
|
8 large eggs
|
|
1 onion, chopped fine
|
|
1 green chilli, chopped fine
|
|
1 tbsp ghee or butter
|
|
1/2 tsp turmeric
|
|
salt to tast
|
|
handful of chopped coriander leaves |

|
| Method | | Crack eggs in a bowl. Combine turmeric powder and salt. Beat lightly till fluffy and mixed well.Heat ghee/butter in a wide pan. Saute onion and chilli on low heat till the onions are caramelised. Add the beaten egg mixture and stir continuously till the eggs are almost cooked and leave the sides of the pan. Garnish with coriander leaves. |

| Remove from heat while the eggs are still a bit runny as they will continue to cook. | | Add a dash of curry powder just before you remove eggs from heat for that typical ethnic flavour. | |
