Malai Peda [Kalakand]

Pedas are small, round flattened milk based sweets usually eaten and distributed to mark a happy or auspicious ocassion in India. They come in all sizes and flavours but are always round in shape. Malai Peda is the most scrumptious of the lot. It is essentially the famous 'Kalakand' [Kalakaand] but just round in shape [Kalakand is a square fudge filled with dairy goodness]. In India these sweets are traditionally made from 'khoya' and are called 'mithai'.
 
Standing Time: 2 hrs
Prep & Cooking Time: 20 mins
  Vegetarian  From My Recipe Book
Ingredients
   225 gm fresh paneer [cottage cheese]
   1 cup sweetened condensed milk
   1/2 cup full cream
   1 tbsp ghee [clarified butter]
   1 tsp cardamom powder
   10 saffron strands
Method
Crumble paneer in a pan. Combine all the ingredients and cook on low heat for 15 minutes stirring constantly, till the mixture leaves the sides of the pan. Allow to cool. Scoop into small paper cups [those used for mini muffins or tiny cupcakes] and stand for 1-2 hours till the 'pedas' are set.
Gel's Notes
  • Add full cream milk while cooking to make delicious and soft 'pedas'.
  • For Kalakand, spread the prepared mixture in a shallow biscuit tray. Cut the fudge squares after it has set.
  • You can add 3 tsp of rose water while cooking for a delightful aroma and exotic taste.
  • Garnish with slivered almonds and pistachios.
