Boil half a litre of milk and as it boils, add half a cup of sour yoghurt, juice of half a lemon, two flakes of crushed garlic and a finely chopped capsicum to it. Strain, press and set to get exotic flavoured 'paneer' [cottage cheese].

| Thandai is a cooling milk based drink, its cooling nature and flavour arises from hints of aniseed and nutmeg. It is typically sampled during the hot summer months. |

| Ingredients |

1 tsp poppy seeds
|
|
1 tsp black pepper
|
|
1/2 tsp nutmeg
|
|
2 tsp aniseeds
|
|
10 almonds
|
|
1 tsp cardamom
|
|
10 raisins
|
|
2 cups milk
|
|
4-5 tbsp sugar
|
|
1 tsp rose essence
|
|
1 cup crushed ice |

| Method | | Soak all ingredients[except milk and ice] in a little water for 8-10 hours. Combine all ingredients with milk and ice. Blend for about a minute. Serve chilled. |
