Green Peas & Sweet Potato Paratha [Indian Style Vegetable Bread]

Prep & Cooking Time: 40 mins
Makes 8 pieces
  Vegetarian  From My Recipe Book
Ingredients
   1 1/2 cups all purpose flour [try wholemeal flour for texture]
   1/2 cup green peas, boiled and mashed
   1 cup sweet potato, boiled and mashed
   1 medium onion, chopped fine
   1 tbsp tomato puree
   1 tsp green chilli paste
   1 tsp ginger garlic paste
   salt to taste
   oil for basting
Method



Add one tsp of oil to the flour. Sprinkle with a bit of salt. Mix well and add enough water to bind into a smooth dough. Set aside for 15 minutes.

Heat 2 tsp oil in a frying pan and fry onion till caramlised. Add mashed green peas, mashed sweet potato, ginger garlic paste, chilli paste, tomato puree and salt. Mix well on low heat for 10 minutes. Allow to cool. Divide the mixture into marble sized balls for the filling.

Divide the dough into lemon sized balls. Roll them, place the filling in the center of each, close the dough over the filling by folds. Roll out into 5inch diameter circles. Roast on a hot pan, basting with oil, till they browned and cooked on both sides.

Serving suggestions
  • Serve hot with a sauce of your choice or pickle.
