| Quick Lamb & Bean Stew |

| This is a great recipe if you are pressed for time at dinner. Healthy, quick, delicious and easily adapted as your own with a few simple variations, I will be making this one over and over again. |

| Ingredients |
|
1 cup boneless lamb strips
|
|
1 can mixed beans
|
|
1 can chopped tomatoes
|
|
2 tbsp olive oil
|
|
salt to taste
|
|
1 tsp sugar
|
|
1 tsp dried oregano
|
|
1/2 cup fresh basil, chopped
|
|
1 tsp paprika |
|
|
| Method | | Heat olive oil in a pan. Add lamb strips and stir-fry on high heat till browned. Reduce heat. Add all the remaining ingredients except basil. Cover and simmer on low heat for 30 minutes. Garnish with freshly chopped basil and serve. |
