| This soup is delicious and requires a simple no-fuss under 10 minutes cooking time. Perfect for when you are rushing. |

| Ingredients |

50 g butter
|
|
225 g mushroom stalks, chopped
|
|
1 small brown onion, chopped fine
|
|
50 g flour
|
|
150 ml chicken stock
|
|
300 ml milk
|
|
salt to taste
|
|
freshly ground black pepper |

| Method |
Melt the butter in a saucepan. Add the onion and saute' for 5 minutes. Add the mushrooms and continue cooking for 5 more minutes. Sprinkle in the flour and cook for a minute. Belnd in the stock. Stir well. Add salt and pepper. Bring the soup to a boil, stirring till it thickens.
Puree the soup in a processor. Return to the saucepan with the milk and bring to a boil. Stir well. Adjust seasoning and add more milk if it is too thick. |
