| This is a quick, fun recipe for two. I prefer to make one large omelette instead of two individual ones and just cut it up in half. The only preparation required is pulling the ingredients out of your refrigerator and you have a Chinese delicacy in under 10 minutes. |

| Ingredients |
| For The Filling |
|
1 tbsp cornflour
|
|
1/2 tsp salt
|
|
1 tbsp soy sauce
|
|
1 tbsp vinegar
|
|
2 tbsp vegetable oil
|
|
1 spring onion, chopped fine
|
|
50 g button mushrooms, sliced fine
|
|
250 g beansprouts
|
|
100 g prawns, peeled | | For The Omelette |

4 eggs, beaten
|

1 tbsp butter
|
|
2 tsp water
|
|
salt to taste |

| Method |
To Make The Filling
Blend the cornflour and salt with the soy sauce and vinegar till smooth. Heat oil in a small saucepan and fry the onions and mushroom. Stir in the blended cornflour and cook over low heat, stirring constantly till it thickens. Drain the beansprouts and stir into the pan alongwith the prawns.
To Make The Omelette
Heat a pan and add the butter. Combine eggs, water and seasoning in a bowl. Beat lightly till fluffy. Pour into the pan and using a fork, quickly draw the mixture from the sides of the pan to the center, allowing the uncooked eggs to run underneath. Cook for a few seconds. Place the filling in the center, fold the omelette in half and serve at once. |
