| Fasting is quite common in many parts of India and this snack is a favourite during fasting. It is essentially a Maharashtrian specialty, but here I provide a slight variation which is often a trademark of Gujarati recipes .. lemon and sugar. This is how I remember my Mum making it. |

| Ingredients |
|
1 cup sago
|
|
1 potato peeled and diced
|
|
1/2 cup coarsely grounded peanut
|
|
2 green chillies finely sliced
|
|
handful of curry leaves
|
|
1 tbsp sugar
|
|
1 tbsp lemon juice
|
|
1/2 tsp coriander powder
|
|
1/2 tsp cumin seeds
|
|
salt to taste
|
|
a pinch of turmeric powder
|
|
1 tbsp ghee
|
|
coriander leaves for garnishing |

| Method |
Soak 1 cup sago in 1 cup of water for 3-5 hours. When the sago is fluffed up, combine with sugar, salt, lemon juice, turmeric powder and coriander powder in a bowl. Mix Well. Heat ghee in a pan. Put in the curry leaves, green chillies, cumin seeds and potato. Mix well. Cover with a lid. Pour water over the lid and cook on low flame for 15 mins till the potatoes are tender or the water on top of the lid has evaporated. Add the ground peanut and sago. Mix well and cook uncovered for 10 mins stirring constantly. Garnish with coriander leaves and serve hot. |
