| Ingredients |
|
420 g can corn kernels
|
|
225 g cheddar cheese, coarsely grated
|
|
2 green shallots, chopped fine
|
|
2 small red chillies, chopped fine
|
|
1 garlic clove, crushed
|
|
1 small bunch coriander, finely chopped
|
|
2 tsp cornflour
|
|
1 tbsp cold water
|
|
35 wonton skins
|
|
sweet chilli sauce, to serve |

| Method |
Combine corn, cheese, shallots, garlic, chilli and coriander in a bowl. Mix well. Set aside.
Mix cornflour and water in a small bowl to form a smooth paste. Place a teaspoon of cheese and corn mixture along one edge of the wonton skin. Brush edges with cornflour mixture using a pastry brush. Roll up, folding ends to form a spring roll. Repeat with the remaining skins and mixture.
Deep fry until golden. |
