Healthy Toddler Mush

I have a very active toddler who is alas, very fussy about food. I am sure a lot of mums and dads can relate to that. So while I am trying to get him to eat Table food and veggies [in vain], I worry about his nutrition too. I have devised this simple recipe to ensure that he gets all the nutrition he needs everyday. I like to call it "Mush".
 
Preparation Time: 5 mins
Cooking Time: 40 mins
Serves 3
  Chicken  From My Recipe Book
Ingredients
   1/2 cup diced chicken
   1 large potato, peeled and chopped
   1 small carrot, diced
   1 cup, spinach leaves
   1/2 cup uncooked rice
   a handful of mint leaves
   3 cups water
   1 tbsp sugar
   salt to taste
Method


Combine all ingredients in a saucepan. Cook on low heat for 40 minutes till meat and rice are tender and the stock has reduced. Mash the "mush" with a large spoon [or puree for a younger baby] and you have a healthy, nutritious dish for your little one.

  • The key is to include 1 carb [potato/sweet potato], 1 meat [chicken/beef/fish/lamb], 1 coloured vegetable [carrot/tomato/pumpkin], 1 green vegetable [spinach/broccoli/beans/peas], 1 herb [mint/coriand
  • For vegetarians, omit the meat and replace with pulses instead [lentils/chickpeas].
