| I have a very active toddler who is alas, very fussy about food. I am sure a lot of mums and dads can relate to that. So while I am trying to get him to eat Table food and veggies [in vain], I worry about his nutrition too. I have devised this simple recipe to ensure that he gets all the nutrition he needs everyday. I like to call it "Mush". |

| Ingredients |

1/2 cup diced chicken
|
|
1 large potato, peeled and chopped
|
|
1 small carrot, diced
|
|
1 cup, spinach leaves
|
|
1/2 cup uncooked rice
|
|
a handful of mint leaves
|
|
3 cups water
|
|
1 tbsp sugar
|
|
salt to taste |
|
|
| Method |
Combine all ingredients in a saucepan. Cook on low heat for 40 minutes till meat and rice are tender and the stock has reduced. Mash the "mush" with a large spoon [or puree for a younger baby] and you have a healthy, nutritious dish for your little one. |
