Hearty Potato And Bacon Soup

Prep & Cooking Time: 35 mins
Serves 4
  No Beef
Ingredients
   750 g potatoes, peeled and roughly chopped
   4 rashers bacon, chopped
   2 1/2 cups chicken stock
   1 onion, chopped
   1 tbsp oil
   2 tsp wholegrain mustard
   1/2 cup cream
Method
Heat oil in a pan. Add onion and bacon and cook for 5 minutes. Add potatoes and cook for 5 minutes. Add the chicken stock. bring to a boil, reduce heat and simmer, covered; for 15 minutes. Add mustard and cream. Simmer for another 2 minutes. Garnish with parsley.
Serving suggestions
  • Serve with toasted sesame seed bread.
