| Fruit Chicken Curry |

| One fine day my significant other said to me, "I feel that we have not been having enough fruits lately." That is when I got the idea for this recipe. I picked up some apples and pears from the fruit bowl and decided to make them into a delicious main course. I also combined some dry fruits for an exotic fruity flavour. |

| Ingredients |

500g boneless chicken thigh fillets
|
|
2 red apples, peeled, cored and chopped
|
|
2 pears, peeled, cored and chopped
|
|
1 red onion, roughly chopped
|
|
1 cup cauliflower florets
|
|
1/2 cup cashewnuts
|
|
2 tsp sultanas
|
|
1 cup water
|
|
1/2 cup cream
|
|
1 tsp ginger garlic paste
|
|
1 tsp turmeric powder
|
|
1 tsp cumin powder
|
|
1 tsp chilli powder
|
|
1 tsp garam masala
|
|
2 tbsp sugar
|
|
2 cinnamon sticks
|
|
3 bay leaves
|
|
salt to taste
|

1 tbsp oil |

| Method |
Heat oil in a deep pan. Put in the ginger garlic paste, bay leaves, cinnamon, cashewnuts, sultanas and onions. Toss around for 2-5 minutes till the onions and dry fruits become golden. Add the chicken fillets, cauliflower and water. Mix in all the spices and seasonings. Cover and simmer for 20 mins. Add the chopped fruits and cream. Stir well. Cover and simmer on low heat for 10 mins. Garnish with coriander and mint leaves. |
