| Vegetable Cutlet |

| Another great finger food recipe, vegetable cutlet used to be one of my favourite's growing up. The original recipe has beetroot which I have excluded from this version as I am allergic to it. |

| Ingredients |
|
3 potatoes, boiled and mashed
|
|
1 cup mixed boiled vegetables [carrots, peas, beans]
|
|
1 tsp chilli powder
|
|
2 tsp lemon juice
|
|
salt to taste
|
|
breadcrumbs to coat
|
|
oil for frying |

| Method |
Mix the vegetables and the mashed potatoes. Add chilli powder, salt and lemon juice. Make small ovals of the mixture. Coat with bread crumbs. Heat a little oil in a pan and gently grill the cutlets till they are brown on both sides. |

| Alternatively, for a healthier version of the cutlets, you may bake them in a greased pan turning them once while baking, so that they are evenly browned and crisped. | |
