| The layering ensures that vegetables are cooked to perfection without becoming mushy. The salmon achieves a brilliant fluffiness. A great satisfying but light dinner. |

| Ingredients |

500 g salmon fillets, cut into neat squares
|

2 large potatoes, thinly sliced
|
|
2 large onions, thinly sliced
|
|
1 red bell pepper, thinly sliced
|
|
1 tsp wonton powder
|
|
2 tsp english mustard
|
|
freshly ground black pepper
|
|
olive oil to drizzle |

| Method | | Drizzle some olive oil in a deep dish casserole. Arrange potato slices at the bottom. Sprinkle some wonton powder and black pepper. Top with a layer of onions and red bell pepper. Drizzle some olive oil. Repeat until the vegetables are used up. Arrange salmon coated with mustard at the very top. Bake uncovered in the oven for 30 minutes at 200oC. Switch off the oven. Cover the dish and stand in the warm oven for 20 minutes. |
