| Ingredients |

2 cups raw zucchini, shredded
|
|
3 large eggs
|
|
2 cups all-purpose flour
|
|
1 cup oil
|
|
1 3/4 cup sugar
|
|
2 tsp baking soda
|
|
1/4 tsp baking powder
|
|
2 tsp cinnamon powder
|
|
1 tsp salt
|
|
2 tsp vanilla |

| Method |
Put zucchini in a strainer and press with hands to squeeze out excess liquid. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt and vanilla. Mix together by hand. Add zucchini. Beat the mixture well. Pour into 2 greased, floured, loaf pans. Bake for 1 hour at 350oF. |
