| This is a very refreshing variation to your average garden variety tea-cakes. Kids especially love it because they love picking out the raisins before they devour the cake. |

| Ingredients |

2 cups all-purpose flour
|
|
1 cup sour cream
|
|
1 cup sugar
|
|
2 large eggs
|
|
1 tsp baking powder
|
|
1/2 tsp baking soda
|
|
1/2 tsp salt
|
|
1/2 tsp cloves, crushed
|
|
1 tsp nutmeg powder
|
|
1 tsp cinnamon powder
|
|
1 tsp vanilla essence
|

1 cup chopped raisins |

| Method |
Combine sugar, sour cream, and well-beaten egg yolks. Sift flour, baking soda, salt, baking powder, and spices in a separate bowl. Combine with the first mixture. Add raisins which have been dredged in 2 tablespoons of the flour [to avoid sinking them to the bottom of the cake]. Add vanilla essence. Fold in stiffly beaten egg whites. Pour into well-oiled cake pans. Bake in moderate oven at 180oC for about 30 minutes. |
