| Quick Lamb & Potato Pot |

| This is a very satisfying dinner which you can enjoy without worrying about dirtying too many dishes. |

| Ingredients |
|
500 g potatoes, unpeeled
|
|
600 g diced lamb
|
|
1 large onion, sliced
|
|
1 tsp rosemary leaves, chopped
|
|
500 g store brought gravy |
|

| Method |
Slice potatoes into medium sized thickness. Cook in boiling water for 8-10 minutes until tender. Heat an ovenproof shallow casserole dish on high heat. Drp-fry the lamb for 5 minutes, until browned, letting the meat release itself from the base before you turn it. Heat grill to medium.
Tip the onion and most of the rosemary into the casserole dish and fry for 3 minutes until the onion is slightly softened. Stir in the gravy and season with freshly ground black pepper. Drain the potato slices and lay over the meat, each one overlapping the previous. Grill for 5 minutes until the potatoes are golden. |
